Piperade-style crunch

  • 4 Swedish Bread
  • 2 eggs
  • 10 cl of milk
  • 1/2 red pepper
  • 1/2 green pepper
  • 4 tablespoons of tomato coulis
  • Lemon thyme
  • 1 clove of garlic
  • 1 onion
  • 1 pinch of ground Espelette pepper
  • 2 tablespoons of olive oil
  • Salt and pepper


Beat the eggs as you would for an omelette.

Add the milk, salt and pepper. Add the ground pepper. Set aside.

Peel the peppers, deseed and cut into thin strips.

Peel and crush the garlic.

Peel and finely chop the onion.

Pour some oil into a frying pan. Brown the onions followed by the pepper strips. Add the tomato coulis, the garlic, and finally the egg and milk mix. Season and stir.

Toss in a few small leaves of lemon thyme. Toast the La Boulangère Swedish Bread and top with the warm mix of ingredients
